A recent study from the researchers of the AFERE chair (UMR FARE) contributes to the global research of the bioconversion of agro-industrial wastes or coproducts, with the use of microbial fermentation to produce pigments.

Wheat bran is a major agro-industrial co-product that must be valorised. Part of the PhD thesis of Mathieu Cassarini at AFERE/FARE is centred on the use of wheat bran as a carbon source for the bioproduction of various natural pigments using microorganisms. The strategy is to use the ability of some microorganisms to degrade plant biomasses and produce secondary metabolites. Those microorganisms (Ashbya gossypii, Chitinophaga pinensis, Chromobacterium vaccinii and Gordonia alkanivorans) were selected from their enzyme potential, using CAZy and MEROPS database. A part of the degradation mechanisms of wheat bran by microorganisms was studied by measuring enzymatic activities of microorganisms and by infrered spectrometry of wheat bran after microbial fermentation.
